Steam the Mussels and Prepare the Flavorful Broth

Start by bringing a large saucepan of water to a boil for the pasta. While the water heats, inspect the mussels carefully. Discard any that are already open and do not close when tapped, as well as any with cracked or damaged shells. Remove the fibrous beards from each mussel and scrape away any barnacles attached to the shells.

Place the cleaned mussels in a bowl of lukewarm water with a pinch of salt and leave them to soak for about 10 minutes. This helps remove any remaining grit.

Meanwhile, heat the olive oil in a large frying pan or wok with a lid. Add the lightly crushed garlic cloves and minced red chilli, or chilli flakes if preferred, and cook gently until fragrant without allowing the garlic to brown.

Shake the pan occasionally while the mussels steam. After several minutes, check for opened shells. Once the mussels have opened, remove the pan from the heat immediately to avoid overcooking.

Using a slotted spoon, transfer the mussels to a bowl while leaving the cooking liquid in the pan.

Remove most of the mussel meat from the shells, reserving a few still attached to half-shells for presentation when serving.

If the cooking broth contains any sand or grit, strain it through a fine sieve before returning it to the pan. Taste the liquid and, if necessary, reduce it to approximately 200ml or add a little water to achieve the desired volume and seasoning.

Finish the Pasta in the Mussel Broth

Generously salt the boiling pasta water before adding the spaghetti or linguine. Cook the pasta until it is about two minutes short of the package instructions for al dente texture.

Using tongs, a spider, or a pasta sieve, transfer the partially cooked pasta directly into the warm mussel broth. This allows the noodles to absorb the seafood flavor while releasing starch that naturally thickens the sauce. Cook the pasta in the broth for around one and a half minutes, stirring continuously until perfectly al dente.

Return the shelled mussels to the pan, then add the chopped parsley and the remaining olive oil.

Finish with a squeeze of fresh lemon juice and a little finely grated lemon zest to brighten the rich seafood flavors.Toss everything vigorously so the pasta becomes evenly coated with the silky mussel broth.

Divide the pasta between serving bowls, arranging the reserved mussels in their shells on top for garnish.
