Ingredients

For the Crackers

  • 1 tbsp fennel seeds
  • 1 tbsp caraway seeds
  • 1 tbsp coriander seeds
  • 2 tbsp sesame seeds
  • 2 tbsp nigella seeds
  • 1 tsp pul biber
  • ½ tsp onion powder
  • 1 tsp flaky sea salt
  • 4 sheets filo pastry
  • 100ml extra-virgin olive oil

The recipe takes about five minutes to prepare and 20 minutes to cook, followed by cooling time.

Prepare the Spiced Seed Mixture

Start by preparing the seasoning that will give the filo crackers their distinctive flavor.

Place the fennel, caraway and coriander seeds in a mortar. Lightly crush the seeds with the pestle, taking care not to turn them into a fine powder.

The goal is to release some of their natural oils and aromas while keeping plenty of texture in the mixture.

Transfer the crushed seeds to a small bowl and add the sesame seeds and nigella seeds.

Stir in the pul biber, onion powder and flaky sea salt. Mix everything thoroughly until the spices and seeds are evenly distributed.

Set the mixture aside while you prepare the filo pastry.

Assemble the Filo Pastry

Preheat the oven to 180C, or 160C fan, and 350F or gas mark 4.

Place a sheet of baking paper on a clean work surface. The paper should be roughly the same size as your baking tray.

Lay one sheet of filo pastry directly on top of the baking paper. Brush the entire surface lightly and evenly with some of the olive oil.

Place a second sheet of filo over the first. Press it down gently to remove any trapped air pockets, then brush the surface with more olive oil.

Repeat the process with the remaining two sheets of filo pastry. Make sure each layer is lightly coated with oil.

Finally, brush the top layer with the remaining olive oil.

Add the Seeds and Bake

Scatter the prepared spiced seed mixture generously and evenly across the top of the filo.

Use your fingers to distribute the mixture so that the seeds cover as much of the surface as possible.

Gently press the seeds into the pastry. This helps them stick during baking and ensures that each cracker gets plenty of seasoning.

Using a sharp knife, cut the layered filo into your preferred shapes. Strips, triangles and squares all work well.

There is no need to separate the pieces before baking.

Carefully slide the baking paper and filo onto a baking tray.

Place the tray in the preheated oven and bake for approximately 10 minutes. Keep an eye on the pastry during the final few minutes, as filo can become golden and crisp quickly.

Cool and Serve

Once the filo is golden and crisp, remove the tray from the oven.

Leave the pastry to cool directly on the baking sheet. As it cools, the filo will become even crispier and develop a delicate, crunchy texture.

Once completely cool, break apart any pieces that have remained connected during baking.

Serve the spiced filo crackers with your favorite dip.
