Make the Homemade Podi Masala

If you’re not using leftover rice, begin by cooking the basmati rice according to the package instructions. Spread the cooked rice on a tray or large plate to cool slightly so the grains remain separate.

To prepare the podi masala, place a dry frying pan over low heat and roast the skin-on peanuts for eight to ten minutes, stirring frequently until they become golden and aromatic. Transfer them to a bowl.

Using the same pan, dry-roast the split yellow peas (chana dal) and cumin seeds for five to six minutes until lightly browned. Move them to the bowl with the peanuts.

Next, dry-roast the peeled garlic cloves over low heat for another five to six minutes until golden. Then set them aside.

Add two tablespoons of oil to the same pan and briefly fry the dried red chillies for about one minute until fragrant.

Transfer the garlic and chillies to a food processor along with the salt and blend into a smooth paste.

Add the roasted peanuts, chana dal, and cumin seeds, then pulse until the mixture forms a coarse powder. Avoid over-processing, as this can release the peanut oils and create a paste instead of a dry seasoning.

Allow the podi masala to cool completely before transferring it to a clean, airtight jar. It can be refrigerated for up to two months.

Cook the Cauliflower and Finish the Rice

Heat two tablespoons of oil in a large saucepan over medium heat. Add the fresh curry leaves, cauliflower florets, and two tablespoons of water. Cover the pan and cook for around 10 minutes, allowing the cauliflower to become tender while retaining a slight bite.

Stir in three tablespoons of the prepared podi masala along with the ground turmeric, salt, and chilli powder. Mix thoroughly so the cauliflower is evenly coated with the aromatic spice blend.

Add the cooked basmati rice to the pan and gently fold everything together until the rice is evenly seasoned.

Increase the heat to high and cook for a final two minutes. Stirring occasionally to allow the flavors to combine and the rice to heat through.

Serve immediately as a complete vegetarian meal or alongside fresh coconut chutney for extra richness and contrast.
