bohemianwanderer – Mushroom rice with soft-boiled eggs is a comforting dish that combines fragrant short-grain rice with a variety of mushrooms, aromatic vegetables and a savory cooking broth. The addition of a soft-boiled egg provides a creamy finish that complements the earthy flavors of the mushrooms.
The recipe uses a mixture of enoki, shiitake, king oyster and oyster mushrooms, although the combination can be adjusted depending on what is available. The mushrooms are fried until golden before being added to the rice, helping to develop a deeper flavor and richer texture.

Ingredients and Preparation
The dish requires 400g of white short-grain or sushi rice, along with light soy sauce, Shaoxing wine, mirin and white-wine vinegar to create the cooking liquid. The recipe also uses 400g of mixed mushrooms, neutral oil, toasted sesame oil, spring onions, fresh ginger and garlic.
First, rinse the rice several times under cold water until the water becomes relatively clear. Then, soak the rice for 30 minutes before draining it. Meanwhile, combine the soy sauce, Shaoxing wine, mirin and white-wine vinegar with water and salt to create the broth.
Next, prepare the mushrooms by tearing the oyster mushrooms into thick strips and slicing the shiitake. Fry them in batches over medium-high heat until they turn golden brown on both sides. By cooking the mushrooms separately, you allow them to develop a deeper, more concentrated flavor before combining them with the rice.
Cooking the Mushroom Rice
After frying the mushrooms, heat the remaining neutral oil and sesame oil in a casserole pot. Add the spring onions, ginger and garlic, then cook them for around two minutes until fragrant.
Next, stir half of the fried mushrooms into the aromatics, followed by the drained rice. Once everything combines, pour the prepared cooking liquid into the pot and bring it to a boil.
Then, arrange the remaining mushrooms over the top before covering the pot with a lid. Cook the rice over a low simmer for around 15 minutes. Once the cooking time ends, remove the pot from the heat and leave it covered for another 10 minutes. During this resting period, the rice finishes cooking and absorbs the remaining liquid.
Meanwhile, soft-boil the eggs while the rice rests. Cook medium eggs for approximately six and a half minutes to produce slightly jammy yolks that pair particularly well with the savory mushroom rice.
Serving the Mushroom Rice
Once the rice has finished resting, it can be divided between four bowls and topped with the soft-boiled eggs. The combination of fragrant rice, golden mushrooms and creamy egg yolks creates a satisfying meal without requiring complicated preparation.
The different mushrooms provide a range of textures, while the soy sauce, Shaoxing wine, mirin and sesame oil give the rice a rich and aromatic flavor. Fresh ginger, garlic and spring onions add another layer of fragrance to the dish.
With around 10 minutes of preparation, 30 minutes of soaking and approximately one hour of total cooking time, this mushroom rice is a practical option for a flavorful homemade meal serving four people.
