Reshmi Kebab Brings Rich South Asian Flavors

bohemianwanderer – These saffron chicken kebabs combine minced chicken with ginger, green chilli, cashews and aromatic spices. The recipe takes 20 minutes to prepare and 15 minutes to cook. It makes eight kebabs, enough to serve four people.

The kebabs use 600g of chicken mince as their main ingredient. One small egg helps bind the mixture, while half a teaspoon each of salt and ground white pepper provide basic seasoning. A finely chopped green chilli adds heat without overwhelming the other flavors.

Fresh ginger provides another layer of warmth and fragrance. A 2.5cm piece, weighing about 10g, should be peeled and finely grated. The recipe also uses one white onion, which is peeled and finely chopped before being added to the mixture.

The spice blend includes half a teaspoon of garam masala and half a teaspoon of ground cumin. Add two tablespoons of ground cashews to provide richness and improve the kebabs’ texture. You can use ground almonds as an alternative if preferred.

Add fresh coriander to provide another aromatic element. Use two tablespoons of finely chopped coriander, including the leaves and tender stalks. Soak a pinch of saffron threads in two tablespoons of warm milk before cooking.

Add two tablespoons of vegetable oil to the kebab mixture to help maintain moisture during cooking. Reserve melted butter for basting the kebabs as they cook.

Begin by heating a barbecue until it becomes hot. Place eight wooden skewers in a bowl of water and soak them. Soaking the skewers helps prevent them from burning during cooking.

Shape Eight Chicken Kebabs and Cook Until Fully Done

Once the mixture is ready, transfer it from the food processor to a clean work surface. Divide the mixture into eight roughly equal portions. Using wet hands makes the mixture easier to handle during shaping.

Each portion should be molded around a wooden skewer. Press the chicken mixture firmly around the skewer to create an even thickness along its entire length. Keeping the kebabs evenly shaped helps them cook consistently.

For barbecue cooking, place the kebabs over the hot grill. Turn them frequently while they cook to ensure that all sides develop an even finish. Baste the kebabs regularly with melted butter during cooking.

The kebabs should remain on the barbecue until the chicken is completely cooked through. Cooking time can vary depending on the heat of the barbecue and the thickness of the kebabs. Checking the center is important before removing them from the heat.

For oven cooking, place the shaped kebabs on a baking tray. Roast them for approximately 10 to 12 minutes at the prepared temperature. Turn the kebabs and baste them with melted butter halfway through the cooking process.

The butter helps keep the chicken moist while adding richness to the finished kebabs. Turning the kebabs halfway through also promotes more even cooking.

Once the kebabs are ready, remove them from the barbecue or oven. Allow them to rest briefly before serving. This gives the juices a moment to settle while the kebabs remain warm.

Serve the saffron chicken kebabs with one lemon cut into wedges. Fresh lemon juice adds acidity that balances the rich chicken, butter and cashews. The citrus also complements the saffron, ginger and spices used in the mixture.

The combination of chicken mince, saffron, garam masala and cumin gives these kebabs a fragrant flavor profile. Ginger and green chilli provide warmth, while coriander adds freshness. Cashews contribute a subtle richness and help create a satisfying texture.
