Lamb Lollipops Pair With Mint Yoghurt and Cucumber

bohemianwanderer – These lamb lollipops offer a simple way to serve seasoned minced lamb with fresh cucumber and a tangy yoghurt dip. The recipe takes about 10 minutes to prepare and 25 minutes to cook. It makes 12 lamb lollipops, enough to serve four people. Dried barberries provide a sharp, fruity contrast to the rich lamb mixture. Dried cranberries or sour cherries can be used instead if barberries are unavailable.

The lamb mixture uses 500g of lamb mince, one egg and several aromatic spices. Ground allspice, cumin and baharat provide warmth and depth to the seasoning. Baharat can be replaced with ras el hanout or shawarma seasoning. One and a half tablespoons of tomato puree or ketchup add moisture and additional savoury flavour.

Begin by preparing the cucumber accompaniment. Leave a medium cucumber unpeeled and use a vegetable peeler to shave it into long ribbons. Combine the ribbons with two tablespoons of cider vinegar, two teaspoons of maple syrup, and one teaspoon of yellow mustard seeds. Add half a teaspoon of flaky sea salt to the mixture.

Toss the cucumber thoroughly to coat the ribbons with the dressing. Stir the mixture several times before serving to distribute the vinegar, maple syrup, and mustard seeds evenly. You can either serve the remaining liquid with the cucumber or discard it before plating.

Prepare the dried barberries before adding them to the lamb. Soak them in two tablespoons of just-boiled water for several minutes. Drain the barberries after soaking, then combine them with the other lamb ingredients.

Prepare the lamb mixture in a medium bowl and add three-quarters of a teaspoon of flaky sea salt. Mix all the ingredients thoroughly until they combine evenly. Divide the mixture into 12 portions and shape each portion into a thin oval cylinder. Aim for approximately 50g per portion and press each one firmly to create a compact shape.

Lamb Lollipops Cook in Seven to Eight Minutes Per Batch

Heat a large nonstick sauté pan over medium-high heat before you start cooking. Place six lamb lollipops in the hot pan without adding any cooking oil. Dry-fry them for approximately seven to eight minutes, turning them several times during cooking. Cook the lollipops until they become golden on all sides and fully cooked through.

Transfer the first batch of lamb lollipops to a plate once they finish cooking. Keep them warm while you cook the remaining six pieces in the same way. Cook the lamb in two batches to prevent the pan from becoming overcrowded and help each piece develop an even golden exterior.

Prepare the yoghurt dip while the lamb cooks. Use 200g of thick kefir yoghurt or Greek yoghurt. Add two teaspoons of dried mint as the main seasoning. You can also add two teaspoons of sumac for extra acidity, although this ingredient remains optional.

Place the yoghurt in a small, wide serving bowl. Sprinkle half of the dried mint and half of the sumac over the yoghurt. Stir the mixture, then scatter the remaining herbs and sumac over the top. This simple dip combines creamy and aromatic flavours.

When the lamb is ready, push each piece onto a wooden stick. Serve the finished lamb lollipops alongside the yoghurt dip and cucumber ribbons. This combination brings together rich lamb, tart dried fruit, creamy yoghurt, and fresh cucumber.

The recipe balances several contrasting flavours without requiring complicated preparation. The lamb provides the main savoury element, while the barberries add acidity and sweetness. The cucumber ribbons add freshness, while the yoghurt dip provides a cool and creamy accompaniment.

Serve the completed dish as a shared meal or a casual main course. You can prepare and shape the lamb before cooking, then assemble the cucumber and yoghurt separately. Serve the lollipops on wooden sticks to make them easy to pick up and eat.
