Sweet and Sour Lemon Tarragon Chicken

Sweet and Sour Lemon Tarragon Chicken

bohemianwanderer – This poached chicken recipe combines tender chicken breasts with a bright dressing made from wine, lemon, tarragon, and vinegar.

The dish uses gentle poaching to keep the chicken moist before serving it with a lightly sweet and acidic dressing.

Start by placing four large skinless chicken breasts in a wide pan. Choose a pan that allows the chicken to sit snugly in one layer.

Pour 300ml of white wine over the chicken. Add all of the light vegetable stock to the pan.

Place the pan over low to medium heat. Allow the liquid to slowly reach a lively poaching simmer. The surface should gently shudder rather than boil vigorously. Poach the chicken for approximately 12 minutes.

Remove the pan from the heat after 12 minutes. Cover it and leave the chicken in the hot liquid for another three minutes.

Carefully remove the chicken breasts from the poaching liquid. Wrap them in foil and allow them to rest for five minutes.

Next, prepare the dressing. Place three tablespoons of soft brown sugar and the remaining white wine in a small saucepan.

Warm the mixture gently and stir until the sugar has completely dissolved. Remove the saucepan from the heat.

Add the grated zest of one large unwaxed lemon to the warm mixture. Add two tablespoons of lemon juice and a handful of fresh tarragon leaves.

Leave the mixture to cool completely. The cooling process allows the lemon and tarragon flavours to develop in the sweetened wine.

Once the mixture has cooled, add three tablespoons of balsamic or red-wine vinegar. Gradually whisk in 75ml of olive oil.

Continue whisking until the ingredients form a smooth emulsion. Taste the dressing and season with salt and black pepper.

Sliced Chicken Rests in Lemon and Tarragon Dressing

Once the chicken has rested, remove the foil. Cut each breast into slices approximately 1cm thick.

Arrange the chicken slices neatly on a serving plate. Make sure the pieces are spread out enough to allow the dressing to reach the meat.

Spoon the prepared dressing generously over the sliced chicken. Ensure the lemon, tarragon, and emulsion are distributed across the entire dish.

Cover the plate and leave the chicken at room temperature for at least 30 minutes. The resting period allows the dressing to penetrate the sliced meat.

The chicken can remain covered for several hours before serving. This makes the recipe suitable for preparing ahead of a meal or gathering.

Gentle poaching is particularly important for this preparation. The chicken cooks gradually in the wine and vegetable stock without the aggressive heat of boiling.

The poaching liquid also helps keep the meat moist during cooking. The covered resting period allows the residual heat to finish the cooking process.

The finished chicken should be tender and evenly cooked throughout. Slicing it while rested also makes the meat easier to arrange and serve.

The dressing provides the main flavour contrast in the dish. Its sweet, sharp, citrusy, and herbal notes complement the mild chicken.

Both balsamic vinegar and red-wine vinegar can be used for the dressing. The choice depends on whether a deeper or more straightforward acidity is preferred.

Fresh tarragon remains an important ingredient in the final flavour profile. Its distinctive herbal character works particularly well with chicken and lemon.

The dish is best served after the chicken has had time to absorb the dressing. Keeping it at room temperature during this period helps the flavours develop.
