The recipe serves six people and takes around 10 minutes to prepare. Cooking and resting require an additional 65 minutes. The lengthy soaking stage helps achieve the dessert’s signature sticky texture and glossy appearance.

You will need 250 grams of glutinous rice, also known as sticky or sweet rice, as the main ingredient. Combine the rice with 400 millilitres of coconut milk, 100 grams of caster sugar, and half a teaspoon of fine sea salt. To serve, prepare three large ripe mangoes and sprinkle the finished dish with toasted sesame seeds.

Begin the preparation by rinsing the rice thoroughly under cold running water. Continue washing the grains until the water runs almost clear. Next, cover the rice with fresh cold water and let it soak. Most cooks recommend soaking the rice overnight to achieve an even texture.

Steaming Method Helps Rice Achieve Soft Texture and Glossy Finish

After soaking, drain the rice thoroughly before steaming. Line a metal colander or large sieve with muslin or a clean tea towel. Spread the rice evenly inside the cloth, then fold the cloth loosely over the grains.

Place the colander above a saucepan containing two to three centimetres of gently simmering water. Make sure the rice stays above the water level throughout the cooking process. Cover the colander with a tight lid or aluminium foil to trap the steam and cook the rice evenly.

Steam the rice for about 30 minutes. During this time, the grains become tender and mostly translucent. Experienced cooks recommend checking that the centre of each grain no longer appears chalky. The rice should remain soft while the grains still hold their shape.

Check the water level regularly during steaming to prevent the saucepan from drying out. Add more boiling water when necessary. This step helps maintain a consistent cooking temperature.

While the rice steams, prepare the coconut sauce in a separate saucepan. Combine the coconut milk, caster sugar, and sea salt, then warm the mixture gently over low heat while stirring continuously.

Do not allow the sauce to boil. Gentle heating dissolves the sugar completely and preserves the smooth texture of the coconut milk. The finished sauce offers a sweet flavour with a subtle salty note that balances the richness of the dessert.

Once the rice finishes steaming, transfer it to a bowl while it is still hot. Pour approximately three-quarters of the coconut sauce over the rice and reserve the remaining sauce, about 120 millilitres, for serving. Fold the rice gently until each grain is coated with the coconut mixture. Cover the bowl and let the rice rest for around 15 minutes. During this stage, the rice absorbs the liquid and develops a glossy finish.

To serve, lightly grease a small rice bowl or ramekin with sunflower or coconut oil. Spoon around 120 grams of coconut sticky rice into the mould and press it lightly into shape. Avoid compacting the rice too firmly, as this can make the texture overly dense.
